The youngest two-star chef in Europe for a long time, Rolf Fliegauf's "Aroma Kitchen" combines fine craftsmanship with sophisticated individuality. His career emerged early on. As a child, Rolf Fliegauf preferred to spend his time in the kitchen of his parents' restaurant. Today he is one of the most decorated chefs in Switzerland. The Michelin Guide awarded him two stars both in his Ecco restaurant in Ascona and in St. Moritz. With the opening of the Atlantis by Giardino, the Swabian-born brought his concept to Ecco Zurich - under the direction of his former sous chef Stefan Heilemann, this restaurant was also awarded two Michelin stars. What distinguishes Rolf Fliegauf’s kitchen? It consists of a very fine mixture of craftsmanship and sophisticated individuality and combines regional down-to-earthness with an international style. Rolf Fliegauf plays with textures and temperatures like a musician on the piano. "Aroma cuisine means that every ingredient retains its original taste," he says, "by combining the components, I get all the notes to their best advantage." A gourmet critic rated him in the “Welt am Sonntag” “one of the greatest cooks of his generation”.
